Summer SLIMDOWN challenge is getting ready to start! The results from my group last year were phenomenal! I know a lot of people rocked their swimwear much more confidently on their vacations! lol😀 I only have 7 spots left!
I loved reading everyone’s 30 days of Thanksgiving posts during the month of November. It was nice to hear some of thing things that people are thankful that are not the usual things. Why do we have to wait until November though? Don’t you think we should express our Thanksgiving on a more regular basis? It seems like it would UP the positivity factor in life and possibly help to keep out some of the negative stuff.
SO – I’ll start!
I am thankful today for:
MONDAYS!! Okay – not many people like Mondays (usually I”m one of them) – but today I choose to be thankful for Monday because its a new week – new opportunities to SHINE at work – fresh start to my workout schedule – and…. um, I”m sure there are other good things about it that will come to me later🙂
HEALTH – I have always been a relatively healthy person. I don’t get sick often. I take good care of myself (thank for teaching me to do that Mom & Dad!). However, until being pregnant, I never fully REALIZED how important it is! Words truly cannot express how grateful I am that I have had such an “easy” and healthy pregnancy so far! I find that I am in the minority in this aspect.

I can honestly say that choosing to become a Beachbody Coach has CHANGED my life. Not only am I in the best shape (even during pregnancy) but my priorities and perspectives in life have completely changed… for the BETTER that is! My biggest dream would be to share it with YOU and help YOU get to a place in your life where you will be truly happy. What is happy? We all have different definitions and views but for me, it involves a long term commitment to my family and FREEDOM— freedom from the 9-5, freedom to come and go as I please, freedom to help others when they need it most, freedom to be significant in my family’s life, whenever they need it! Are YOU working towards your happiness? I know the unknown is “scary”, I was there… but what’s life without risks? You want something, you have to take charge and act on it. Trust me!
Wow – I am more than halfway thru this pregnancy already!! That’s CRAZY! Here is an update as of Week 21:
How far along? 21 Weeks
Total Weight Gain? As of my 20 week appointment I have gained TEN pounds! Y*I*K*E*S The doctor assured me that is right within normal range – but still – that seems like so much!
How big is baby? He is the size of a pomegranate
Gender: It’s a BOY!
Maternity Clothes? Very much so! The pants for sure – still wearing a mix of tops… and I have no maternity workout clothes or anything.
Morning Sickness? None – hooray!
Mood Swings? I wouldn’t describe it as mood swings – more so, easily irritable.
Buy anything for baby this week? No… I don’t think we’ve bought anything yet to be honest! Last I heard the hubby was mid-way thru an Ebay auction for the baby monitor we want – but not sure if we won🙂
Stretch Marks? None that I’ve noticed – but do people start seeing them NOW – during pregnancy??? Or do they show up after the fact? I have just about used up my Oh Baby! Mambino Belly Butter…. and while I liked the scent – I hated how “hard” it was in the jar. You literally had to dig it out and then it would get all up under my fingernails – yuck. SO, I have ordered the Cocoa Butter belly butter, beautifying oil and body scrub from The Body Shop…. hopefully I”ll like this better.
Sleep? I sleep pretty good and fall asleep easily…. my back is hurting a little bit though. Maybe I need more pillows?!
Best Moment This Week: Well…. this actually happened last week – but I would obviously have to say SEEING our baby boy at our anatomy scan – we got to see 3D too!!! All limbs are accounted for and he has a brain, a pumping heart and stomach! yay!
Worst Moment This Week: Destination PROCRASTINATION. I waited until a few days ago to START a paper for my HR Mngmt class that we should have been working on all semester long. SO, worst moment(s) were putting that bad boy together in the late hours of Sunday PM to submit on Monday!
Movement: Nope – nada!
Cravings: Nothing to report! The “carbonation” craving has gone away too….
Labor Signs: None thankfully
Belly Button In or Out? It’s in, but it’s definitely flattening out… I must have a shallow belly button or something?
What I miss? Alcohol, sushi… and the “ease” of having a normal lunchmeat sandwich without heating it up.
What I am looking forward to? Our 3D ultrasound in a couple of weeks and my most FAVORITE holiday next week – Thanksgiving! Food & Family – what else do you need?
Milestones: Hubby and I agreeing on a nursery theme!🙂

Another YUMMY recipe for you guys!!
My hubby started the BODY BEAST workout on Sunday! Its one of Beachbody’s NEWEST additions to their line of amazing at home fitness programs! I am excited to do it myself sometime post-pregnancy🙂
Anyways – once he committed to doing the program he decided he wanted to do it FULL OUT 100% by the book! That meant NUTRITION – meal plan and all! He made me laugh the other day with his quote, “Insanity + Oreos does not equal abs” :) So true! He’s always kind of maintained a consistent weight, but he’s never gotten the amazing infomercial quality results he’s been after because he hasn’t committed to the nutrition aspect.
Anyways – I have been working hard to pack his lunches and plan his meals according to the BEAST nutrition guide! Luckily it came with a TON of really delicious recipes in the book! Last night I made the Turkey Power Meatloaf. It was AWESOME! I almost had a second serving myself!
Here is the recipe – notice there is NO CHEESE!! I was nervous that it was not going to be moist enough, but it was still excellent! Try it for yourself and let me know what you think!
Turkey Power Meatloaf (from Body Beast)
2lbs ground lean turkey
1 cup all natural salsa
1 cup whole wheat bread crumbs
2 lg eggs ( lightly beaten)
3 cloves finely chopped garlic
1tsp sea salt
Ground black pepper
Fresh chopped parsley
Preheat oven 375
Combine all and press into 9×5 loaf pan
Bake 60-70 mins until done
Let it cool for 10 mins and slice into 8 pieces.

Why do you do what you do? That day job that you go to every M-F…..why do you show up everyday? Is it because you enjoy your work? Are you passionate about your work, or are you spending those 40+ hours per week strictly for a pay check and maybe some benefits.
When I was a kid, I had always envisioned having a career that I loved. My parents both worked full time jobs, and while I’m grateful to them for providing a great childhood and home life, I had in the back of my mind that I didn’t want to spend my working years that way. I don’t believe that either of them felt passionate about their work or looked forward to a Monday.
However, as time goes on, and life happens, you have to make ends meet. Like many others, I ended up taking a job in order to help support my family and pay our bills. Years later, still working at this job, I realized I was falling into the exact path I promised myself I would not go on! However, I didn’t know how to switch paths….I just knew I wanted MORE out of my life.
About 18 months ago I was introduced to Team Beachbody. I joined because I liked the perks that came with the membership. I knew there was great income potential, but I didn’t put much thought into that aspect. I just really enjoyed helping people…..then, little by little I was seeing growth in my business. It was like an ah-ha moment. I saw others around me being able to stay home with their family all thru this Beachbody opportunity. So my mindset changed and I began to think…
WHY NOT ME?
That is the day I drew a line in the sand and decided to take my coaching business a little more seriously. I created this why board to help remind me of all of the reasons that I am working so hard for. Seeing this picture each day gives me hope and gives me a purpose to keep on working towards my ultimate goal of being able to stay home and be with my family and have a career that I enjoy and feel passionate about!
So again I ask you why you do what you do? What are you working towards? Is that day job that you’re going to each day taking you a step closer to what your own goals and visions are for yourself and your family? If not, think about it. You deserve the best out of life and it is up to you to take those turns on your own path to get to your ultimate destination.
Stop limiting yourself and dream BIGGER!
One of the ‘symptoms’ I am experiencing with pregnancy is weird dreams. I have always been able to remember my dreams – but I feel like since being pregnant – I experience more vivid dreams…
I always remember them precisely when I wake up, and then little by little they fade away. I am also noticing that my dreams are incorporating a lot of people/friends fro the past, such as middle school/high school friends. I keep on thinking that I need to write them down in the morning while its fresh in my mind…
Last night I had a dream about a promotion being offered to fly down to Florida. In my dream it was something that I had won. The “prize” was getting the flight for $300. I guess in the back of my mind I have been wanting to plan a trip to South Florida for a while, so I take it that my dream was my subconscious telling me its time! So the crazy part is that my Husband (without me saying ANYTHING) took the initiative to search flights, etc. today and guess how much it is for both of us to fly down?! YES, THREE hundred dollars!! Is that crazy or what?!?!
Well, from now on, I am going to try to document my dreams first thing in the AM when I have a good one! Maybe I can even do voice text to myself just so that it jogs my memory later on…

Greenberry Shakeology…..its one of those things that I have only met a handful of people that prefer it…..But lately, I hear more and more people who are choosing it over chocolate. I tried Greenberry about a year ago and didn’t like it very much….
However, my parents DRILLED this phrase into my head when I was younger and was trying new food/flavors (mostly in relation to veggies…lol)…”Today may be the day that you like it”……and I cannot tell you how many times that was TRUE!
Anyways – because of that saying always ringing in my head, I had been wanting to try Greenberry again and perhaps try a different recipe to prepare it with. So my friend told me about this “Shamrock Shake” that trainer Chalene Johnson put out… Check it out:
I made it EXACTLY per the recipe and its DELICIOUS! SO good!! I have no clue how to describe the taste, but its just really good and no “wheatgrass” after taste like the first time I tried it. SO, if you have some unused Greenberry Shakeology sitting in your cupboard, TRY this recipe!!! Also, think about getting the Shakeology packets that come with 1/2 chocolate and 1/2 Greenberry!

It is officially COLD here in East Tennessee! The leaves are quickly falling from the trees, its rainy, and the temperatures are dropping by the day! This can only mean one thing…….CROCKPOT SEASON is here!
I love using my Crockpot – but for some reason, I hardly touch it during the Spring/Summer months and tend to use it primarily in Fall/Winter.
I came across this DELICIOUS recipe for chicken taco chili and its Ah-Mazing! So quick and easy and relatively cheap to purchase the ingredients. Forgive the un-official measurements….thats ons of the best parts of crockpotting to me is the dump and go method – not really taking time to measure🙂
Chicken Taco Chili (adapted from SkinnyTaste.com)
- 1 onion, chopped
- 1 can black beans (drained/rinsed)
- 1 can kidney beans (drained/rinsed)
- 1 8-oz can tomato sauce
- 10 oz frozen corn kernels
- 2 cans diced tomatoes w/chilies
- 1 packet taco seasoning
- 1/2 a palmful of Cumin
- 1/2 a palmful of Chili Powder
- Boneless skinless chicken breasts – enough to make it as “meaty” as you want. I used 3.
- chili peppers, chopped (optional)
- chopped fresh cilantro (optional)
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream.
I serve mine over brown rice….or sometimes just plain. I forgot to take a picture of mine when it was done because I went for a bowl right away! But here is a pic of the finished product from SkinnyTaste:
